Ever wanted to try a handmade high-carbon steel kitchen knife? Then the Gateway Series is the pick for you.
I've removed everything that isn't essential and ended up with an affordable kitchen knife that's solely focussed on performance and affordability.
Laser-cut and hand ground out of a piece of 1.2604, a steel that is wear resistant and forgiving to work with. Coming out at around 60 HRC it stays sharp longer than most shelf-bought stainless steel knives, while remaining easy to re-sharpen.
Please note that a high-carbon steel isn't rust resistant and using it will create a patina, a discoloration of the steel (at the beginning sometimes left on the food) that isn't toxic and makes the steel more rust resistant over the years.
!!!Never put a knife in the dishwasher!!!
Not only will it rust but the chemicals eat away at the steel making it dull and even more prone to rusting. Just rinse the blade with water (and soap if it is really dirty) after use and be sure to dry it off right away. An occasional coat of food-safe oil also goes a long way.
